Keep in mind the flavor is richer and more buttery than fresh cream β those unaccustomed to it may find it a bit heavy.
Fresh Cream: Light, delicate, but needs constant refrigeration
Fresh cream (whipped cream) has a light, airy texture that melts in your mouth and is less sweet β perfect for those who don't like overly sweet, rich cakes. Its weakness is that it can't handle heat well: left out of the fridge for more than about 30 minutes in hot weather, it starts to lose its shape. It's best for cakes that will be cut and eaten right away, not displayed for long.
